As a quick starting point, let’s name a few of the components of most profit & loss statements, in order of controllable impact:
1) Food Cost
2) Labor Cost
3) Operating Expenses (Utilities, Maintenance, Smallwares, Flatwares, Uniforms, etc.)
4) Property Expenses (Taxes, Rent, etc.)
P&L’s are often broken down in many different formats, after dissecting the lunacy, most items will fall into one of the above categories.
As an operator, the largest impact items have always been, & will always be, the food cost & labor cost categories.
Food Cost can be a very complicated process, often the wrong focus is placed in this category.
Believe it or not, initial purchase price is not the only deciding factor!
It is the cost of what the customer perceives as “inedible” that costs us the most in the industry. It is not what the customers do eat, but what we spend money on that the customer does not eat!
Often due to improper execution of recipes, inferior products are actually the real culprit in this arena, not what we paid for the products being consumed.
Human nature, once again, has taught us to believe it is the “front end” cost that is so vital, when in fact it is the 360 degree rule that burns us. This rule is simple, the food that goes to the guest, is not consumed & returns in the trash can!
